Healing Recipes: Spiced Vegetable Curry
Turmeric powder is a wonderful spice with a warm and earthy flavor. It's not only delicious but also known for its potential health benefits due to the active compound curcumin.
- Ingredients:
- 2 tablespoons sunflower oil or ghee
- 1 onion, finely chopped
- 2 garlic cloves, minced
- 1 tablespoon fresh ginger, grated
- 1 teaspoon turmeric powder
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon chili powder (adjust to your preferred level of spiciness)
- 1 cup diced potatoes
- 1 cup diced carrots
- 1 cup cauliflower florets
- 1 cup green beans, trimmed and cut into 1-inch pieces
- 1 can (14 oz) diced tomatoes
- 1 can (14 oz) coconut milk
- Salt and pepper to taste
- Fresh cilantro, chopped, for garnish
- Cooked rice or naan bread for serving
Instructions:

In a large pot, heat the vegetable oil over medium heat. Add the chopped onions and sauté until they become translucent.
