Turmeric powder is a wonderful spice with a warm and earthy flavor. It's not only delicious but also known for its potential health benefits due to the active compound curcumin.

  1. Ingredients:
  • 2 tablespoons sunflower oil or ghee
  • 1 onion, finely chopped
  • 2 garlic cloves, minced
  • 1 tablespoon fresh ginger, grated
  • 1 teaspoon turmeric powder
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon chili powder (adjust to your preferred level of spiciness)
  • 1 cup diced potatoes
  • 1 cup diced carrots
  • 1 cup cauliflower florets
  • 1 cup green beans, trimmed and cut into 1-inch pieces
  • 1 can (14 oz) diced tomatoes
  • 1 can (14 oz) coconut milk
  • Salt and pepper to taste
  • Fresh cilantro, chopped, for garnish
  • Cooked rice or naan bread for serving

Instructions:

  1. In a large pot, heat the vegetable oil over medium heat. Add the chopped onions and sauté until they become translucent.

  2. Stir in the minced garlic and grated ginger and cook for another minute until fragrant.

  3. Add the turmeric powder, ground cumin, ground coriander, and chili powder. Stir well to coat the onions, garlic, and ginger with the spices.

  4. Add the diced potatoes, carrots, cauliflower, and green beans to the pot. Stir to combine with the spices.

  5. Pour in the diced tomatoes (with their juices) and coconut milk. Bring the mixture to a simmer and let it cook for about 15-20 minutes or until the vegetables are tender.

  6. Season the curry with salt and pepper according to your taste.

  7. Serve the turmeric-spiced vegetable curry over cooked rice or with naan bread. Garnish with fresh cilantro for added flavor and color.
