Golden Khichdi Cakes
Crisp and golden on the outside, soft and flavorful inside, these elevated khichdi cakes transform Aryaa Khichdi into a beautiful savory meal with fresh herbs, lemon and A2 ghee.

Ingredients
- 1 pouch Aryaa Organic Khichdi
- 1 included Aryaa Khichdi spice packet
- Water, using slightly less than usual for a thicker finished khichdi
- 1 tbsp Aryaa A2 ghee, plus more for pan-searing
- ¼ cup finely diced shallot or red onion
- ¼ cup finely chopped fresh cilantro
- 2 tbsp finely chopped fresh mint
- 1 small green chili, finely minced, optional
- Zest of ½ lemon
- 1–2 tsp fresh lemon juice
- 2–3 tbsp chickpea flour, as needed for binding
- Freshly ground black pepper, optional
Preparation
1. Cook the khichdi
Prepare the Aryaa Khichdi with the entire included spice packet, using slightly less water than usual so the finished khichdi is soft and creamy but not loose or soupy.
Stir in 1 tablespoon of A2 ghee and allow the khichdi to cool completely. For best results, refrigerate for 30–60 minutes.
2. Add the fresh ingredients
Place about 3 cups of cooled khichdi in a bowl and gently fold in the shallot, cilantro, mint, optional green chili, lemon zest and lemon juice.
3. Bind the mixture
Add the chickpea flour 1 tablespoon at a time, using only enough for the mixture to hold together when shaped.
The goal is a patty that stays tender and soft inside rather than becoming dense.
4. Shape the cakes
Form the mixture into 6–8 thick patties and gently flatten the tops.
For an even better texture and cleaner shape, chill the formed patties for another 10–15 minutes before cooking.
5. Pan-sear until golden
Heat a thin layer of A2 ghee in a skillet over medium heat.
Add the patties and cook for approximately 3–4 minutes per side, allowing a deep golden crust to form before flipping.
Finish with a squeeze of fresh lemon.
Serve With
Serve the Golden Aryaa Khichdi Cakes warm with plain yogurt or a mint-cilantro yogurt, fresh cucumber, radish, herbs and a squeeze of lemon.
For a simpler presentation, they are delicious with just a spoonful of cool yogurt on the side. The creamy tang of the yogurt pairs beautifully with the warm, crisp khichdi cakes.
Optional Mint-Cilantro Yogurt
Mix together:
- ½ cup plain yogurt
- 1 tbsp finely chopped cilantro
- 1 tbsp finely chopped mint
- 1 tsp fresh lemon juice
- Freshly ground black pepper, optional
Spoon alongside the warm khichdi cakes just before serving.
Chef Tip: Leftover chilled khichdi works especially well for this recipe because it firms naturally and creates an even better golden crust.
