Basmati rice has a less dramatic impact on blood sugar levels, while moong beans contribute essential nutrients, including B-vitamins and minerals like magnesiumand potassium. The dish's simplicity and the inclusion of spices like turmeric and cumin add anti-inflammatory benefits, making it ideal for cleansing and healing the body according to Ayurvedic practices. In Ayurveda, khichdi is especially recommended during detoxes for its ability to balance the body's doshas (vital energies) and promote digestive health.

Cooking: Soak lentils and rice for 1 hour to enhance nutrient absorption. Rinse well. Heat 2 tablespoons of ghee in a saucepan, add spice mix.  Stir in lentils and rice, infusing them with spices.  Add 4 cups of water and bring to a boil. Simmer for 30 minutes, season with salt and pepper.  Add veggies in the last 10-15 minutes. Enjoy the ancient, healing goodness!

Instant Pot Instructions:Soak lentils for 30 minutes. In your Instant Pot on "Saute" mode, melt 2 tablespoons ghee, add Khichdi pouch contents, sauté briefly. Drain soaked lentils and rice, add to Instant Pot with vegetables. Sauté 2 minutes. Pour 4 cups water, add salt, and pepper. Pressure cook 8 minutes, natural release 10 minutes. Stir and serve. Enjoy!
