Healing Recipes: Sweet Amla Rice Pilaf
Ingredients:
- 1 cup basmati rice, washed and soaked for 30 minutes
- 1 tablespoon ghee (clarified butter) or vegetable oil
- 1 small onion, finely chopped
- 2-3 cloves garlic, minced
- 1/2 cup mixed vegetables (carrots, peas, corn, etc.)
- 5-6 Amla candy pieces, finely chopped
- 1/4 cup roasted cashews or almonds
- 1 teaspoon cumin seeds
- 1/2 teaspoon turmeric powder
- Salt and pepper to taste
- 2 cups water
Instructions:

In a large saucepan, heat the ghee or vegetable oil over medium heat.

Add the cumin seeds and let them sizzle for a few seconds until they release their aroma.

Add the chopped onion and sauté until it becomes translucent.

Stir in the minced garlic and sauté for an additional minute.

Add the mixed vegetables, chopped Amla candy pieces, and turmeric powder. Cook for a few minutes until the vegetables become tender.

Drain the soaked rice and add it to the pan, mixing it well with the vegetables.

Season with salt and pepper to taste.

Pour in the water and bring the mixture to a boil.

Reduce the heat to low, cover the pan with a lid, and let the rice cook for about 15-20 minutes or until the rice is fully cooked and the water is absorbed.
