2 large yuca roots, peeled and cut into chunks
3 tbsp olive oil
4 cloves garlic, finely chopped
Juice of 1 lime
1 small onion, finely chopped
Salt to taste
Boil yuca chunks in salted water until fork-tender, about 20-30 minutes, then drain and let cool.
In a skillet, heat olive oil and sauté garlic and onion until they turn golden and fragrant.
Pour the garlic and onion mixture over the cooked yuca.
