Moong Bean Herb Salad

A fresh yet warming dish, perfect for digestion and detox, using minimal ingredients while staying light and flavorful.

Ingredients:

   •   1 cup cooked moong beans (soft but intact)

   •   2 tbsp extra virgin olive oil

   •   1 tbsp fresh lemon or lime juice

   •   2 tbsp fresh cilantro (chopped)

   •   2 tbsp fresh parsley (chopped)

   •   1 tbsp fresh mint (chopped)

   •   ¼ tsp cumin powder

   •   Pinch of Himalayan pink salt

   •   Pinch of hing powder (optional, for digestion support)

Instructions:

1. Warm the beans: Lightly warm the cooked moong beans in a pan with 1 tbsp olive oil and a pinch of hing (optional). Remove from heat.

2. Mix ingredients: In a bowl, combine the warm moong beans with chopped herbs, cumin powder, salt, and lemon/lime juice.

3. Drizzle with olive oil: Add the remaining 1 tbsp olive oil, mix gently, and let it sit for a few minutes to absorb flavors.

4. Serve warm or at room temperature.

Optional Additions:

   •   Grated fresh ginger for extra warmth.

   •   Black mustard seeds (tempered in olive oil) for depth of flavor.

   •   A touch of ghee for added nourishment.
