Ingredients
- 2 tablespoons Aryaa A2 Ghee
- 1 onion, finely chopped
- 2 garlic cloves, minced
- 1 tablespoon fresh ginger, grated
- 1 teaspoon Aryaa Organic Turmeric
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- ½ teaspoon chili powder (optional)
- 1 cup diced potatoes
- 1 cup diced carrots
- 1 cup cauliflower florets
- 1 cup green beans, trimmed and cut
- 1 can (14 oz) coconut milk
- Salt and pepper to taste
- Fresh cilantro, chopped, for garnish
- Cooked rice or naan for serving
Instructions
- Heat the base. In a large pan, warm Aryaa A2 Ghee over medium heat. Add the chopped onion and sauté until soft and translucent.
- Add garlic and ginger, cooking for 1–2 minutes until fragrant.
- Stir in turmeric, cumin, coriander, and chili powder. Cook briefly to allow the spices to release their aroma.
- Add potatoes, carrots, cauliflower, and green beans. Stir well to coat with the spices.
- Pour in the coconut milk. Stir to combine.
- Reduce heat and let the curry simmer for 20–25 minutes, until vegetables are tender and flavors are well blended.
- Add salt and pepper to taste. Garnish with fresh cilantro.
- Serve warm with cooked rice.
