Healing Recipes:Turmeric Quinoa Salad

Ingredients:
- 1 cup quinoa, rinsed
- 2 cups water or vegetable broth
- 1/2 teaspoon turmeric powder
- 1 cucumber, diced
- 1 red bell pepper, diced
- 1/4 cup red onion, finely chopped
- 1/4 cup fresh cilantro, chopped
- 1/4 cup fresh mint leaves, chopped
- 1/4 cup roasted chickpeas (optional, for added texture and protein)
- Juice of 1 lemon
- 2 tablespoons extra-virgin olive oil
- Salt and pepper to taste
Instructions:

In a medium saucepan, combine quinoa, water or vegetable broth, and turmeric powder. Bring to a boil over medium-high heat.

Reduce the heat to low, cover the saucepan, and let the quinoa simmer for about 15 minutes or until the liquid is absorbed and the quinoa is fluffy.

Remove the cooked quinoa from the heat and let it cool to room temperature.

In a large mixing bowl, combine the cooked quinoa, diced cucumber, red bell pepper, red onion, fresh cilantro, and mint leaves.

In a small bowl, whisk together the lemon juice, extra-virgin olive oil, salt, and pepper to make the dressing.

Drizzle the dressing over the quinoa salad and toss everything together until well coated.

If desired, sprinkle roasted chickpeas on top for added crunch and protein.

Serve the turmeric quinoa salad chilled or at room temperature.
