Cooking: Soak lentils and rice for 1 hour to enhance nutrient absorption. Rinse well. Heat 2 tablespoons of ghee in a saucepan, add spice mix. Stir in lentils and rice, infusing them with spices. Instant Pot Instructions: Soak lentils for 30 minutes. In your Instant Pot on "Saute" mode, melt 2 tablespoons ghee, add Khichdi pouch contents, sauté briefly. Drain soaked lentils and rice, add to Instant Pot with vegetables. Sauté 2 minutes. Pour 4 cups water, add salt, and pepper. Pressure cook 8 minutes, natural release 10 minutes. Stir and serve. Enjoy!
