This gently spiced millet dish offers a nourishing alternative to heavier grains, combining lightness with steady, sustained energy. Infused with the subtle warmth of cardamom, it supports digestion while bringing a refined, aromatic depth to a simple staple.

In Ayurvedic tradition, millet is valued for its easy digestibility and ability to create balance without burdening the system. Cardamom enhances this quality, helping the body absorb nourishment more efficiently while maintaining a sense of lightness.

Ingredients:

  • 1 cup millet
  • 2 cups water or vegetable broth
  • 2-3 Aryaa Cardamom pods
  • 1 cup chopped vegetables (like bell pepper, cucumber, and cherry tomatoes)
  • 1/4 cup chopped fresh herbs (like parsley and cilantro)
  • Salt and pepper to taste

Instructions:

  1. Rinse the millet under cold water.
  2. In a pot, combine the millet, water (or broth), and slightly cracked cardamom pods.
  3. Bring to a boil, then reduce heat to low, cover, and let simmer for 20-25 minutes, or until millet is cooked and fluffy.
  4. Let the millet cool, then mix in the chopped vegetables and herbs.
  5. Season with salt and pepper to taste.
  6. Remove the cardamom pods before serving.
  7. Serve chilled or at room temperature.
