Healing Recipes: Cardamom Lentil Soup
Ingredients:
- 1 cup green lentils
- 4 cups vegetable broth
- 2 carrots, diced
- 2 celery stalks, diced
- 1 onion, diced
- 2 cloves garlic, minced
- 1 teaspoon cardamom seeds
- Salt and pepper to taste
Instructions:
- Rinse the lentils under cold water.
- In a pot, heat a little bit of oil over medium heat.
- Add the carrots, celery, and onion, and cook until they start to soften.
- Add the garlic and cardamom seeds, and cook for another minute until fragrant.
- Add the lentils and vegetable broth. Bring to a boil, then reduce heat to low and simmer for about 30 minutes, or until the lentils are cooked.
- Season with salt and pepper to taste, and serve hot.
