Ingredients:

  • 1 cup green lentils
  • 4 cups vegetable broth
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon cardamom seeds
  • Salt and pepper to taste

Instructions:

  1. Rinse the lentils under cold water.
  2. In a pot, heat a little bit of oil over medium heat.
  3. Add the carrots, celery, and onion, and cook until they start to soften.
  4. Add the garlic and cardamom seeds, and cook for another minute until fragrant.
  5. Add the lentils and vegetable broth. Bring to a boil, then reduce heat to low and simmer for about 30 minutes, or until the lentils are cooked.
  6. Season with salt and pepper to taste, and serve hot.
