Healing Recipes: Cardamom-Spiced Millet
Ingredients:
- 1 cup millet
- 2 cups water or vegetable broth
- 2-3 cardamom pods
- 1 cup chopped vegetables (like bell pepper, cucumber, and cherry tomatoes)
- 1/4 cup chopped fresh herbs (like parsley and cilantro)
- Salt and pepper to taste
Instructions:
- Rinse the millet under cold water.
- In a pot, combine the millet, water (or broth), and slightly cracked cardamom pods.
- Bring to a boil, then reduce heat to low, cover, and let simmer for 20-25 minutes, or until millet is cooked and fluffy.
- Let the millet cool, then mix in the chopped vegetables and herbs.
- Season with salt and pepper to taste.
- Remove the cardamom pods before serving.
