Khichdi "Indian Risotto"

Khichdi is a plant-based, high protein, light and easily digestible meal. It is gentle on the digestive system, making it ideal for detoxification and giving the digestive organs a rest. The combination of rice and lentils provides a good source of easily absorbable proteins.

Khichdi Recipe
Ingredients:
• 1 pouch Aryaa Khichdi – Lentil & Rice Mix
• 1 whole spice packet (inside pouch)
• 2–3 Tbsp Aryaa A2 Ghee or avocado oil (vegan)
• 4–5 cups water
• 2 cups chopped vegetables (optional): onions, carrots, green beans, celery, zucchini, mushrooms, garlic, etc.
• Salt to taste
Method:
- Remove spice packet. Rinse lentil & rice mix; soak 30 min (optional).
- Heat fat over low heat.
- Add spice packet; bloom 20–30 sec (do not brown).
- Add lentil & rice mix; stir to coat.
- Add vegetables (optional).
- Add water; bring to boil.
- Reduce to simmer; cover 25–35 min until soft.
- Adjust seasoning. Rest briefly to thicken.
INSTANT POT (1 POUCH)
- Sauté (low) 2–3 Tbsp Aryaa A2 Ghee
- Bloom spice packet 20–30 sec.
- Add rinsed lentil & rice mix.
- Add vegetables (optional) + 4–4½ cups water.
- High Pressure 10–12 min.
- Natural release 10–15 min; quick release.
- Stir; adjust consistency if needed.
